In 2006, Vins del Comtat’s team decided to plant a plot of experimental vineyard. Result of this work, experiences were performed to check the acclimation of white varieties in the mountain of Alicante. From all those grapes, only the variety Viognier were qualified as exceptional, and was decided to bottle the wine separately. Viognier marks a new trend in Mediterranean white wines, mature wines with exceptional freshness and acidity.
Slow toasted Viognier has been elaborated with grapes belonging to the best plot of the Viognier variety from the winery.This wine has been in special French oak barrels for two months . The barrels are normally toasted by flame, burning chips remaining during the process of manufacturing in the cooperages. The slow toasting barrels are gently warmed by some special stoves which accurately control the temperature of roasting.This provides a greater aromatic complexity and the smoky notes are removed.
With this process, the winery have achieved a longer and more expressive wine thanks to the contribution of the wood , but respecting the identity of the viognier grapes bred in Alicante mountains, specifically in the towns of Benimarfull and Planes de la Baronía.
If the wine is exceptional, is not less important the bottle and the labeling. “An original bottle that brings you the freshness of the wine, eliminating, also, the label of paper by the screen printing on the bottle.”
