Vineyard and Winemaking
From old traditional MEDITERRANEAN vines grown in the village of La Canyada (Alicante) such as Monastrell and Arcos. They are historic vineyards, planted in the 60s on sandy soils that provide fine, elegant wines and marked salinity.
It is a wine that conveys the personality of the old wines of Alicante, with the proportion of indigenous varieties that have historically been cultivated in our territory.
Les Passeres is a plot wine with unique characteristics that have given it the category of ‘Alicante Singular’ within the Denomination of Origin Wines Alicante.
Its elaboration process includes fermentation and aging in earthenware jars + aging in used French oak for 4 months.

Tasting and Pairing
Sight: Bright ruby red.
Nose: The nose is very intense and fresh with marked salinity.
Mouth: In the mouth the purity of fresh fruit stands out, with a light, velvety, fluid and persistent passage. It is a medium-bodied wine with very fine tannins.
Pairing: Due to its delicacy, it is a very appropriate wine for different dishes. Especially for tapas (fried fish, salads) and rice dishes (paella, arròs al forn, rice with rabbit and snails, arròs a banda, caldero…).
Service temperature: Between 14-16 ºC.
The Winery
In the 60s, the centenary Bodegas Ferrero, in the municipality of La Cañada (Alicante), ceased its activity and as a result the family has been inheriting generation after generation what was left of it, an incredible room of centenary barrels in extraordinary conditions of conservation that have been brought to the present day. A set of very old soleras, unaltered for more than 60 years.
This great collection of barrels houses classic dry fondillones. But also sweet wines, typical of the characteristic style of Alto Vinalopó.
In this sub-zone of the Alicante Denomination of Origin, dessert wines achieved great fame and popularity during the 19th century.
