Vino Tinto Mañà Rustic

 

Vineyard and Winemaking

 

Mañà Rustic is an oak red wine made from 100% Cabernet Sauvignon. It is aged for 6 months in French oak barrels.

The vinification of this wine begins with the harvesting of the grapes at the optimum moment of ripeness. Manual harvesting with destemming and crushing, with nitrogen protection to carry out the pre-fermentation maceration at 10ºC. This technique consists of prolonging the pre-fermentation stage of maceration in order to obtain greater color and body in the wine, giving it a greater capacity for aging and a more intense, powerful and sophisticated aromatic profile, for 24 hours, performing a more selective extraction of aromas, color and tannins in an aqueous medium and without the presence of alcohol from fermentation, avoiding the transfer of tannic and bitter substances.

This is followed by fermentation and maceration, with the addition of selected yeasts in stainless steel tanks for 12 days at a controlled temperature of 25ºC, which enhances the varietal characteristics of the wine. Subsequently, malolactic fermentation takes place in French oak barrels, where it remains for 6 months.

Finally, the wine is clarified and lightly filtered before bottling. Afterwards, the wine is aged in bottle for 3 months in an air-conditioned cellar between 15 and 18ºC, obtaining the desired roundness and ageing.

Tasting and Pairing

 

Sight: Intense red color with some ruby tones.

Nose: The nose is complex with aromas of ripe fruit such as plums and blackberries with toasted touches from barrel aging.

Mouth: The palate is balanced with good acidity and persistent, soft tannins, again showing notes of red fruits.

Pairing: Rice, meats, pates and cheeses.

Service temperature: Between 16-18 ºC.

 

The Winery

 

The origin of Santa Catalina del Mañán, popularly known in its beginnings as Bodega del Mañán, dates back to 1962 with the foundation of a large winery in the plain of Mañán, Monóvar.

The current winery owes its name to the patron saint of the town, and has been expanded over the years to reach a harvest of 5 and a half million kilos of grapes and a fleet of French oak barrels and American oak barrels for aging wines, as well as the wine that characterizes the province of Alicante throughout history, the Fondillón.

The history of the winery is the result of the initiative of some thirty farmers with their own wineries, who came together to solve a logistical problem regarding the transport of wine, creating the great winery of Mañán, with better facilities, logistical conditions and location.

Courageous and hard-working winegrowers among whom we highlight Francisco Paya Hernández and Silvestre Pérez, as founders and architects of such a fruitful union.
