Vineyard and Winemaking
Mary Rose is a unique wine, classified as Blanc de Noir. This term refers to a white wine made from red grapes, which implies a complex winemaking technique.
The grapes are of the Monastrell variety, the most prized native variety of the province, known for its versatility. Harvesting is carried out before the grapes are fully ripe, in order to achieve the desired 12 degrees of alcohol. The grapes are carefully selected to prevent the berries from breaking or undesired fermentation. If this were to happen, the must would come into contact with the skins and would no longer be a white wine but a rosé, so the technique must be meticulous and very selective.
The Monastrell grapes used in Mary Rose come from a plot with calcareous and coarse soils, and the vines produce a limited amount of grapes. After harvesting, the wine ferments in 500-liter French oak barrels for 20 days, in contact with its own lees and at a controlled temperature.
This is the first vintage of this wine with a production of only 2,500 bottles.

The Winery
The origin of Santa Catalina del Mañán, popularly known in its beginnings as Bodega del Mañán, dates back to 1962 with the foundation of a large winery in the plain of Mañán, Monóvar.
The current winery owes its name to the patron saint of the town, and has been expanded over the years to reach a harvest of 5 and a half million kilos of grapes and a fleet of French oak barrels and American oak barrels for aging wines, as well as the wine that characterizes the province of Alicante throughout history, the Fondillón.
The history of the winery is the result of the initiative of some thirty farmers with their own wineries, who came together to solve a logistical problem regarding the transport of wine, creating the great winery of Mañán, with better facilities, logistical conditions and location.
Courageous and hard-working winegrowers among whom we highlight Francisco Paya Hernández and Silvestre Pérez, as founders and architects of such a fruitful union.
