NU VA La Zafra red wine


Vineyard and Winemaking


NU VA red wine is made from 100% Valencí Negre grape variety, an ancient variety almost extinct. With seven days of maceration and no barrel aging (desNUdo). Complex and elegant, red fruits and spices.

Made naturally, spontaneous fermentation with its indigenous yeasts and minimal intervention in the winery.

Production: Sustainable cultivation. Manual harvest in 15 kg boxes in the early hours of the morning, transporting the grapes directly to the winery.

Winemaking: Six days of maceration with the skins. Fermentation begins in 300 liter tanks at 20ºC for 20 days. Minimal intervention in the winery. No chemicals or commercial yeasts. No added sulfites. Unfiltered and unclarified.

Very limited production (650 bottles) as there is only a single plot of this almost extinct variety and the vines are very old and low yielding.

Tasting and Pairing


Sight: Low robe red color with brick-red rim due to micro-oxidation in the bottle.

Nose: Great aromatic potential where we would emphasize the delicacy of the wine. We will find expression of scrubland, violets.

Month: Subtle and balanced wine. Round and friendly tannin with good acidity. It is a fruity red wine, very sweet and elegant. With a marked personality with wild herbaceous touches that make it a unique and special wine.

Pairing: These are wines with a marked Mediterranean character. Impeccable to pair with a good paella.

Service temperature: Between 14-15 ºC.


The Winery


“In La Zafra we take care of lands that have been cultivated by five generations of our family in Monóvar (Alicante), under the watchful eye of “La Peña de La Zafra”.

We started with 1 hectare of Monastrell vines, native to the area, cultivated in a sustainable way, dry-farmed and goblet-pruned (traditional), and for the last two years we have been recovering another two hectares from the family, which were about to be lost. We currently manage 7 hectares.

We make our natural wine in a small micro-winery, with the minimum intervention: natural wines without chemicals, correctors or added sulfites.

We love to get involved with associations, movements, people and projects that create and build a more social, sustainable and responsible way of relating both among people and with our environment. We also love and are excited to be able to share our illusion, our way of seeing the world, our work and our natural wines with you…”
