This cheese of ‘San Antonio Cheeses’ is elaborated with pasteurized goat milk, lactic ferments, salt and rosemary.
This cheese is cured between 6 and 12 months. It has a herbal and fresh flavor with a good intensity.
‘San Antonio Cheeses’ uses Granadina goat’s milk, which is collected from local farmers daily.

History
Callosa d’en Sarrià town is in the north of Alicante. It is located in the heart of the Marina Alta region, between mountains but also near of the Mediterranean sea. Its climate is warm, so the average temperature is 20ºC.
In this small and beautiful town, the cheese factory ‘San Antonio’ was founded in 1968 by Mrs. María Devesa Llorens. The initial production was 2kg of cheese and they were sold in the town market daily. Now, Mrs. Toñi is the third generation who makes the cheeses. This factory is over 50 years old making cheese.
