The bomba rice is a variety of round grain. It is native to India, and very common in some areas of the Spanish east coast, especially in the Valencian Community. Due to its amylose content, it adheres less to cooking vessels than other types of rice. The grain expands during cooking, so it has a greater resistance to “open”. These characteristics, as well as its flavor, make it ideal for the preparation of all kinds of paellas, baked rice and also soups, since it is difficult to pass.
The Marjal of Pego-Oliva Natural Park is located in the north of the Marina Alta and it is the only rice area in Alicante. Its clean spring waters together with the natural fertility of the soil make this rice an unique product in the Mediterranean arc.
The orography of the Pego Valley, near the sea and surrounded by mountains, gives it an excellent microclimate for cultivation. The Pego-Oliva Marjal Natural Park is included in the valley and provides the ideal conditions for the cultivation of this unique rice.
