Callosa d’en Sarrià is in the north of the province of Alicante. It is located in the heart of the Marina Alta region between Sierra Aitana mountain and the beaches of Altea and Benidorm. The Algar river passes through the town, which has its mouth in Altea. Its climate is warm, the average temperature is 20ºC.
The cheese factory was founded in 1968 by Mrs. María Devesa Llorens. The initial production was two kilograms of cheese daily, which were sold in the town market. Now, is the third generation who makes the cheeses.
