Cinnamon is the inner bark of the same name genus tree, obtained peeling its branches and letting the barks dry. Ceylan variety, also called “true cinnamon”, is the original one. Usually it has a golden pale brown color and a sweet and light citric flavor. This variety is different from Cassia cinnamon, wich barks are harder and a bit spicy.
