This cheese is elaborated with pasteurized goat milk, lactic ferments and salt. It is cured over 8 months in the cave.

The milk is from the Murciano Granadina goat race. And the farms are small herds which are located in Alicante.

About the company..

Callosa d’en Sarrià town is located in the north of Alicante. It is located in the heart of the Marina Alta region between Sierra Aitana mountain and Altea and Benidorm beaches. The Algar river passes through the town, which has its mouth in Altea. Its climate is warm, the average temperature is 20ºC.

The cheese factory was founded in 1968 by Mrs. María Devesa Llorens. The initial production was two kilograms of cheese daily, which were sold in the town market.

Now, is the third generation who makes the cheeses.
